QUICK RAJMA RICE








INGREDIENTS :

Rajma - -1 cup
Rice- 1 cup
Coriander and curry leaves.
Green chillies-2
Pudina
Tomato - 1
Salt to taste
Chopped Onion-1(Medium)
Coconut milk-2 cup
Ginger-garlic paste - 1 tsp
Bay leaves-2
Chilli Powder - 2 tsp
Coriander powder - 1 tsp
Garam masala powder - 1 tsp
Cloves -- 2
Cinnamon sticks - -3

SOAK RAJMA OVERNIGHT

METHOD OF PREPARATION:

1) Heat a 3 tbsps of ghee in a pressure cooker.Add onion,fry them till onion becomes transparent.
2) Add bayleaves,curry ,coriander leaves and finely chopped tomato.Fry till tomato is cooked well.
3) Then add ginger - garlic paste.Fry them till the raw smell goes.
4) Add rajma,chilli powder,green chillies, and garam masala powder.Add little water and mix well.

5) Pressure cook for 3 whistles.Allow the steam to leave .
6) Then ,add rice to the mixture and mix well.Then add 1/2 cup of coconut milk .Add salt to taste.Leave for 3 whistles.Turn off the flame.

Serve hot with raitha or any spicy vegetable kurma.

SPICY BRINGAL CHUTNEY


INGREDIENTS: 

Brinjal - - 4 medium sizes 
Tamarind - - a small piece 
Coconut -- 4 pieces 
Salt to taste 
Onion -- 1 small 
Tomato - 1 small 
Curry leaves and coriander leaves
Red chillies -- 2 
Channa dal -- 2 tbsps 

METHOD OF PREPARATION : 

1) Heat 1 tsp of oil in a pan . Fry all the ingredients . Cook till the raw smell of brinjal leaves and it becomes tender and skinny . 
2) Blend them in a mixture . Serve with dosa /idli.

VEGETABLE BIRIYANI




INGREDIENTS :

Basmati Rice- 1 cup (Soak rice in water for 20 minutes)
Mixed Veggies - 1 cup
Cinnamon - 2
Cloves - 1
Bay leaves - 1
Salt to taste
Chilli powder - 1 tsp
Curd - 1 tsp
Garam masala powder -- 1 tsp
Biriyani masala - 1 two
Turmeric powder -- 1 tsp
Pudina
Coriander leaves
Onion - 1



TO GRIND :


Green Chillies -4
Ginger - garlic paste - 1 tsp
Tomato - 1
Fennel Seeds - 1 tsp


METHOD OF PREPARATION :

1 ) Heat ghee in a pressure cooker . Add Cinnamon, Cloves, biriyani leaves, phool, Rajpatri, Annasi poo. When it splutters, add chopped onion and fry till transparent.


2) Add the grinded masala and saute till the raw smell leaves. Add pudina and coriander leaves.



3) Add Chilli powder, Biriyani powder and garam masala powders and salt.


4) Add the vegetables and a spoon of curd, mix it well.


5) Add 1 cup of water and bring it to boil.


6) Finally add rice and cook for 2 whistles. Allow the steam to leave.


7) Open the lid and mix from the sides.


Serve hot with raitha .

RAJMA IN CASHEW-COCONUT GRAVY

INGREDIENTS :

Rajma -- 1 cup
For masala :

Onion -- 1
Tomato -- 1
Green chillies -- 2
Cashew -- 2 tsp
Coconut -- 3 pieces
Salt to taste
Garam masala -- 1 tsp
Turmeric powder -- 1 tsp
Chilli powder - -1 tsp

METHOD OF PREPARATION :

1) Soak Rajma overnight .
2) Heat oil in a pressure cooker . Once hot add jeera and 2 red chillies , then rajma with the grinded masala and cook for 4 whsitles .
3) Leave in slow flame till the oil separtes .

Serve hot with roti .

PAANI POORI





INGREDIENTS :

For Poori :

Rava - 1 cup
Maida - 1 cup

For Paani :

Mint and Coriander leaves --a handful
Chilli powder -- 1 tsp
Garam masala Powder - 1 tsp
Green chillies -3
Salt
Tamarind juice - 1/2 cup
Lemon juice - 2 tbsps

Grind mint and coriander leaves with green chillies and strain the pulp . To the filtered water , add chilli powder,garam masala,tamarind juice,lemon juice and salt.

For Masala :

Aloo/Potato -- 3
Chilli powder -- 2 tsp
Turmeric powder -- 1/2 tsp
Salt to taste

1) Pressure cook aloo for 6 whistles till it softens and keep aside .Mash them well with a ladle .
2) Heat kadai . Once hot , add aloo ,spice powders and salt with little water.
3) Mix them well till forms thick masala.

Serve poori with this masala stuffing , paani and chopped onion .

RAJMA IN MILK GRAVY/ SOYABEANS CURRY



INGREDIENTS :

  • Rajma -- 1 cup
  • Milk -- 1 cup
  • Onion -- 1
  • Tomato - 1
  • Green chillies - 2
  • Fennel seeds - -1 tsp
  • Cashew -- 1 tsp
  • Salt to taste
  • Turmeric powder -- 1 tsp
  • Garam masala - 1/2 tsp
  • Chilli powder - -1 tsp

METHOD OF PREPARATION :

1) Soak rajma overnight , strain the water and keep aside .
2) Heat a spoon of oil in a pressure cooker. Saute onion,tomato and chillies till tender . Allow it to cool.


3) Add rajma and mix it well. Then add grinder masala, milk and sufficient water .Cook for 5 whistles till rajma is soft and gravy is thick . Garnish with coriander leaves .

DIWALI CELEBRATION 2009

DIWALI --- FESTIVAL OF LIGHTS . Diwali ranks first among other festivals enjoyed by the kids . The main reason behind this is : Diwali gives them lot of sweets , savories and crackers . They wear their new dresses like Jeans , Shirt , Silk skirts , etc in their favourite colours and new trend . Crackers are special during diwali .........the most enjoyed by them .

For womans , diwali brings lots of challenges in preparing new different sweets and savories .
They need to get good remarks from their family members especially from their in-laws and hubby . They love to win wholelot of love of their family members by her cooking . They love to decorate their house with diyas and colourful rangoli in front of their house and in Pooja table. ...Would like to be the queen of diwali celebration .

For men , diwali brings a wholelot of sweets to fill their tummy without any restrictions . Quietly relax in a sofa , watch their favourite special programmes in TV , munching an array of special delicacies .

Diwali brings lot of happiness to grand parents with their grand children and great grand children running around bursting crackers , wearing new suits and munching sweets . Whole house filled with sounds of laughter .Whatelse can bring happiness to a person than these festivals ?......................

MUTTON BIRIYANI





INGREDIENTS :

Mutton -- 1/2 kg with bones
Chilli powder - 2 tsps
Turmeric powder -1 tsp
Garam masala powder - --1 tsp
Lemon juice -- 1 tsp

TO GRIND :

Onion -- 1
Tomato - -1
Green chillies -- 2
Cinnamon -- 1
Pudina and Coriander leaves
cloves -- 1

METHOD OF PREPARATION :

1) Marinate mutton with turmeric powder , salt , chilli powder and garam masala powder .
2) Heat ghee in a pressure cooker . Once hot , add the curry leaves , grinded masala and saute till the raw smell leaves .
3) Then add the marinated mutton,chilli powder,turmeric powder,garam masala powder,lemon juice and saute till mutton leaves some water .
4) Add the rice and mix well with the masala .
5) Add 1 3/4 cup water and pressure cook for 3 whistles .

Serve hot with raitha .

MIXED VEGETABLE KURMA


 

First cooked food will be always special. This is my first cooked recipe. It is one of the easy recipe, can be prepared in no time. Sending this to MY FIRST COOKED FOOD EVENT .

INGREDIENTS :

Mixed vegetables (Peas, Carrot, Cannellini beans, Potato) -- 2 cups 
Onion -1 
Turmeric powder - 1/2 tsp
Salt to taste
Mustard-1/4 tsp
Jeera-1 tsp
Curry leaves

TO GRIND:

Coconut pieces - 6
Green chillies-5
Fennel seeds- 1 tsp
Ginger - a small piece
Garlic cloves-2
Kuskus-1/2 tsp 
Cashew --- 4 
Coriander seeds - 1 tsp

METHOD OF PREPARATION:

1) Heat oil in a pressure pan. Add mustard seeds and jeera ,when it splutters add chopped onion, saute for few minutes till tender.
2) Add in the grinded masala, turmeric powder and Salt. Saute till the raw smell leaves.
3) Then add vegetables to it, 1 cup of water. Pressure cook for 2 whistles. Release the steam, remove the lid and allow it to boil till it the oil separates out. Garnish it with Coriander leaves. Turn off the flame. Serve hot with Roti/ Chapathi/ Poori.
