DRY FRUITS CURRY

HORSEGRAM VEGETABLE SOUP


INGREDIENTS :

Horsegram - 1/4 cup
Vegetables of your choice - 1/4 cup
Methi leaves - 1 handful
Tomato - 1 ripen
Salt to taste
Chilli flakes - 1/2 tsp
Pepper powder - 1 tsp
Vegetable stock - sufficient
Olive oil - 1/2 tsp

METHOD OF PREPARATION :

1 . Soak horsegram for few hours and pressure cook it well .
2 . Boil vegetables and store its stock.
3 . Saute methi leaves in olive oil for few minutes.
4. Then boil vegetable stock in a vessel , add vegetables , horse gram , mashed tomato , Salt ,  Chilli flakes and pepper powder .Then finally add sauted methi to it . Bring to boil for few minutes .
5. Remove from the flame and serve hot.

MOR SADHAM / MOR KOOZH / BUTTERMILK RICE - SUMMER SPECIAL

Mor Sadham is one of the best coolant to reduce your body heat and a diet food for weight loss .All the marriages in TamilNadu will never miss this rice in their party menu especially during Summers.A simple and easy rice to go with.....This rice can be ever prepared by blending rice well with buttermilk in a blender to have a koozh consistency and can be given for toddlers.



INGREDIENTS :

Fresh curd - 1 cup
Rice - 1/2 cup
Water - 1/2 cup
Salt to taste
Asafotida - 1 tsp
Pearl/Sambar Onions - 1/4 cup
Ginger and Green Chilli - 1 tsp each (optional)

METHOD OF PREPARATION :

1. Beat curd with water and asafoetida well with little salt or Blend them in a blend well . Add ginger and green chillies to it(optional) .

2. Mash the rice well with a ladle and mix it up well with the buttermilk . 

3. Garnish it with finely chopped onions and serve .

WHEAT DOSA / GODHUMAI DOSAI



INGREDIENTS :


Wheat flour - 1 cup
Salt to taste
A pinch of Asafoetida

METHOD OF PREPARATION:

1) Mix sufficient water to the wheat flour with salt,asafoetida and water .The batter must be thin without lumps.

2) Heat dosa tawa. Once hot, spread a spoon of oil and then spread a ladle of the batter for dosa . Spread a tsp of oil around it . Flip to the other side till done .

Serve hot with hot chutneys.

INGREDIENTS :

Pappad - few
Onion , Tomato , Coriander leaves - 1 cup finely chopped 
Chilli flakes and Oregano for garnishing.

well and serve with the finely chopped tomato,onion,coriander leaves,chilli flakes and oregano .

CARROT BUN HALWA

Happy Holi to all my readers !! A Colourful delicious halwa as a part of our virtual holi party with my blogger friends Priya Suresh akka,Viji , Priya , Manjula , Ramya and Pradeepa.




INGREDIENTS :

Carrot - 3 medium size
Bun (Plain/Milk bun) - 1 
Badam milk mix - 2 tsp
Sugar - 1 cup
Ghee
Roasted Cashews - few

METHOD OF PREPARATION :

1 ) Clean and peel the skin of carrot . Boil them and mash it well or blend in a mixer.
2)  Heat ghee in a pan . Once hot , add well shredded bun to it and roast it well. 
3) Followed by adding blended carrot to it.Mix it up well.
4) Meanwhile , boil sugar in a separate pan to make a syrup of one string thickness consistency.
5) Once done , add carrot bun mixture to the sugar syrup . Add ghee and mix it up well till halwa consistency.The halwa should come without sticking to the pan.
6) Garnish with ghee roasted cashews.

SAPOTA MILKSHAKE



INGREDIENTS :

Sapota/Chickoo - 6-10 ripen
Milk - 1/2 cup
Badam milk powder - 1/2 tsp
Sugar/honey - as per your taste.

METHOD OF PREPARATION :


  1. Wash and peel the skin of the fruit and de-seed them.
  2. Chopped them finely and blend it with milk,badam mix and sugar well in a blender,
  3. Serve chilled.

Bisibela Bath



INGREDIENTS:

Rice - 1 cup
Toor dal - 1/2 cup
Carrot - 1
Onions - 1 cup
Turmeric powder - 1/2 tsp
Red chillies - 8
Mustard - 1 tsp
Curry leaves and Coriander leaves
Tamarind - Lemon size
Salt to taste
Green peas - 1 cup


FOR MASALA :


Fenugreek seeds - 1/2 tsp
Coriander seeds - 2 tsp
Red chillies- 8
Channa dal - 1 tsp
Cloves,Elachi - 1
Cinnamon - 1
Kus kus - 2tsp

METHOD OF PREPARATION:


1) Pressure cook rice,dal, a pinch of turmeric powder,2 tsps of oil ,asafoetida,carrot and peas with with 6 cups of water for 2 whistles.
2) Heat oil in a frying pan and fry mustard,urad dal.When it splutters,ass curry leaves and chopped onion.fry them till tender.
3) Then add chopped tomato.Fry for a minute.
4) Add tamarind juice, salt to taste and allow it to boil till the raw smell leaves.
5) Add masala and boil for another 5 minutes till the masala smell leaves.

Paasipayar Vadai / Green Moong Dal Vadai



 INGREDIENTS:


Green Moong whole - 1 cup

Green chillies - 3 nos

Curry leaves(chopped) as required

Salt to taste

Onion(chopped) - 1 (big)

Ginger - small piece 

Jeera - 3 tsps

METHOD OF PREPARATION:


1) Soak green gram in water overnight.

2) Grind them well with salt.Then to the batter add finely chopped ginger , curry leaves ,  finely chopped onion,green chillies,and jeera.

3) Mix them well.

4) Make small balls and flatten them. Spear your hand with oil and flatten them.

5) Meanwhile ,heat oil in a kadai.Once hot,deep fry vadas.Fry them till it turns golden brown and crispy .

Serve hot with chutney .Linking it with Vegan Thursday by Priya Akka.

Masoor Dal Sambar



INGREDIENTS:


Drumsmtick - 1

Brinjal - 3 

Tomato - 2 ripen 

Masoor dal - 1 cup

Onion - 1 cup

Mustard , Jeera , Methi seeds - 1 tsp

Sambar powder - 2 tsp

Salt to taste

Hing ,Curry leaves , coriander leaves

Tamarind - a small piece



METHOD OF PREPARATION :


1) Pressure cook dal with a spoon of oil and turmeric powder for 3-4 whistles.Meanwhile,soak tamarind in little water.Boil chopped drumstick and brinjal in a separate kadai till cooked .

2) Heat oil . Add spices , once it splutters add chopped onion and saute till tender.

3) Add 1 chopped tomato and saute till skinny. Then , add boiled drumstick,curry leaves and saute well.

4) Add dal   and tamarind juice to it with sufficient water. Followed by adding Sambar powder,hing and salt .

5) Cover with a lid and allow to boil till the oil separates.Garnish it with coriander leaves .

ROSEMILK PAYASAM


A yummy pink treat for my dear sister Priya Ranjit on her birthday . Wishing you a wonderful year ahead , my dear . There is now words to explain my happiness and love for you ...feeling blessed . 



INGREDIENTS :

Roasted Semiya - 1/2 cup

Sago - 1/4 cup
Rava- 3 tbsps
Milk - 1/4 cup
Rose syrup - 3 tbsps
Badam milk mix - 1 tspSugar for taste
Few cashews and Raisins
Ghee - 1 tsp

METHOD OF PREPARATION :


1) Boil sago separately till cooked .Drain the remaining water .

2) Meanwile ,boil 1/4 cup of water , when it starts boiling add semiya and roasted rava to it . Cook till semiya and rava is half cooked . Then add boiled milk with sugar and mix well .Followed by adding sago . 


3) Boil it till it thickens. Then add rose syrup and badam milk mix to it .Continuous stirring is needed.

4)  Once done,turn off the flame and leave aside.

5 ) Heat ghee in a pan.Add cashews and raisins.Fry for a minute and then mix them with kheer.

Payasam is ready to serve.
